Elderflower Fritters Recipe

Fragrant and Fluffy Fritters

What’s not to love about a cheeky little early morning forage? This recipe is great for a sweet treat or pudding. The batter is light and fluffy and is a really nice early summer treat.

Ingredients

  • 12 Elderflower heads

  • 100g Self-raising flour

  • Oil for frying

  • 2tsp Cornflour

  • 1 Egg

  • 150ml Sparkling water

  • 1 - 2tsp Caster sugar

  • A pinch of salt

  • Icing sugar for dusting and a wedge of lemon

Method

  • Whisk egg, flours and sugar together then add sparkling water. This helps lighten the batter.Heat oil in a saucepan until very hot.

  • Dip each flowerhead into the batter and fry for 30 seconds.

  • Remove with a slotted spoon and dry on kitchen paper. Dust with icing sugar, small squeeze of lemon and eat while crunchy.
