Gluten Free Courgette Fritters
Love this quick and easy starter or side dish.
Method
Grate the courgettes, then sprinkle with 1/2 tsp salt. Allow to sit for a few minutes. The squeeze all the liquid out.
In a mixing bowl, combine the grated courgettes with buckwheat flour and eggs.
Grate some parmesan or hard cheese into the mixture and season it with salt and pepper.
Mix everything thoroughly until well combined.
Heat some oil in a frying pan over medium heat.
Take a tablespoon of the courgette mixture and place it in the pan, then flatten it slightly.
Repeat this process with three more tablespoons of the mixture, so you have four fritters cooking. Pan fry for about 2-3 minutes until they become golden brown, t flip them and cook the other side until it's also golden brown. Repeat Step 3 until you've used up all the mixture
Serve the fritters on a salad or serves with a poached egg on top for a delicious meal
